Ossian Vides y Vinos is a winery dedicated to protecting and making Verdejo from Segovia one of Spain's great whites. The project that Pedro Ruiz and the Carraovejas team took over in 2013 is perhaps one of the winemaking projects with the greatest identity in the area.
Blessed with a unique vineyard, a natural heritage that they are committed to preserving, they focus all their energies on turning these incredible hawthorns into world-class whites.
From the respectful management of the vineyard (certified organic farming), to the precision oenology, all gestures aimed at enhancing the value of their pre-phylloxera verdejo.
Ossian's complex environment
The seas of pine trees in the Segovian countryside surrounding the vineyard melt white under the snow almost every year, and yet the summers in the area are dry and with large temperature fluctuations night/day. The altitude does not make things easy for the plant either, as the vineyards are located above 900 metres above sea level.
All these ingredients result in deep and complex verdejos with a mineral and sapid structure, unlike other verdejos.
The elaboration of Ossian wines
The winemaking process is based on a traditional concept, gentle pressing, indigenous yeasts, racking into barrels and foudres, and slow ageing on the lees. A traditional conception but a search for specific and personal expressions of some areas or elaborations such as the case of Capitel, an angular Verdejo from a tongue of slate that emerges in the Peña Aguda plot, or their dry and sweet Verdling where they make a nod to the great German whites to better understand their grapes and their wines.
