In 1992, Éric Bordelet, formerly sommelier at the Arpege Alain Passard restaurant in Paris, took over the production of a family estate in Normandy. He grows more than 20 varieties of apples and 15 varieties of pears. His style of work is entirely artisanal and alchemic.
A friend of the wizard of Sauvignon Blanc, Didier Dagueneau, he was persuaded by Didier to return to the family estate near Calvados in southern Normandy and create a totally new and natural approach to cider. Fourteen years later, Bordelet is now recognised as the biggest and best cider producer in France.
With his extensive experience in the world of wine, Bordelet has a special perspective with which to make the transition to his new life. His ciders are almost as complex as the finest wines in the world, and possess a character and thirst quenching ability that will not only make them incomparable summer drinks, but also wonderful beverages for a wide variety of cuisines.
