The jewel of Burgundy
Founded by Simon Verry in the 18th century during the reign of Louis XV, the winery was later bought by the House of Bollinger.
A specific, precise and millimetric selection of individual plots of land increases the quality and the best performance of the vineyard. The soil in these areas, moreover, favours the roots of the vines to extend more deeply and therefore better express the typicity of the terroir.
In this winery, Burgundy's potential varieties predominate: the white Chardonnay and the red Pinot Noir. Each of them uses different vinification techniques to obtain the wines.
The Chardonnay variety is usually made by pneumatic pressing, where the first and last pressings are eliminated to obtain the base wine. Fermentation is carried out in oak barrels under strict temperature control.
As for Pinot Noir, the clusters enter the fermentation tanks whole, thus achieving improved temperature control, gradual release of sugars and a more elegant tannic structure.
