Making notes

Mix 30-45% of reserve wines with grapes up to 50 to 60 different crus. Pinot Noir (50-55%) predominates, which provides that typical structure of Veuve Clicky, while his Chardonnay (28-33%) provides essential elegance and delicacy in a perfectly balanced wine and, finally, a touch of Meunier (15-20%) that serves to round the mixture. The long aging in our "Crayères" (minimum of 3 years for Yellow Label) is what confers champagne its sedity.
