Remirez de Ganuza
Remirez de Ganuza is one of the iconic wineries of the Sierra de Cantabria. Fernando Remirez founded the winery in 1989, acquiring some of the best vineyards in the Sonsierra area between Rioja Alta and Alavesa. Loyalty to the vineyard, with an average age of over 50 years, and an obsession for precision and cleanliness throughout the process up to the glass. The 2004 vintage was awarded 100 Parker points for its Gran Reserva.

Description of Remirez de Ganuza Trasnocho
Remirez de Ganuza Trasnocho is one of the winery's historic wines that demonstrates the innovative and always avant-garde character of Fernando Remírez. Trasnocho is one of the winery's wines that is made only from the de-stemmed shoulders of the grapes from the oldest vineyards. Once this double selection has been carried out on different tables, the blend of 90% Tempranillo, 5% Graciano and 5% Viura and Malvasía is fermented in 7000 litre wooden vats. One of the keys to this wine is that once fermented, a membrane bag is placed inside the vat and filled with water so that the grape skins are gently pressed in the vat without any friction with pips, which can give herbaceous or bitter notes. The wine is then aged for 21 months in new oak barrels 95% French and 5% American.Ideal pairing
