Lustau
Cathedral-like wineries, with high ceilings, thick walls, large windows and immaculate terracotta floors that maintain a stable temperature and humidity to favour the special microclimate that Jerez wines need.
Lustau is the only winery that makes wines in the three cities of the Marco: Jerez de la Frontera, El Puerto de Santa María and Sanlúcar de Barrameda.
The vineyards receive around 3,000 hours of sunshine each year, accompanied by relatively high rainfall (600 litres per square metre on average per year). The landscape of the area is mostly made up of hills of very white limestone soil, known as "albariza". Its uniqueness is due to the fact that this area was under the sea thousands of years ago.
All this together with a great team of master coopers, master blenders, oenologists and field team add to its 120 years of experience a unique know-how in the area.

The palate is dry, and iodized salt. Slightly bitter finish reminiscent of bread and green olives.

Description of Lustau Fino Jarana
Lustau Fino Jarana is a generous wine made with the variety palomino by Bodegas Lustau in D. O. Jerez-Xérès-Sherry. In certain areas of Spain the word jarana >/strong> is used as a synonym for fiesta or verbena. Lustau wanted to appeal to the festive character that this fino, elaborated in Jerez by the traditional method of criaderas and soleras, transmits. Aroma sharp, almond and delicate. In the mouth it is light, dry and not very acidic. The special characteristics of this wine are the result of a process of biological aging under veil of flor.Ideal pairing
