The Winery
Lustau
Cathedral-like wineries, with high ceilings, thick walls, large windows and immaculate terracotta floors that maintain a stable temperature and humidity to favour the special microclimate that Jerez wines need.
Lustau is the only winery that makes wines in the three cities of the Marco: Jerez de la Frontera, El Puerto de Santa María and Sanlúcar de Barrameda.
The vineyards receive around 3,000 hours of sunshine each year, accompanied by relatively high rainfall (600 litres per square metre on average per year). The landscape of the area is mostly made up of hills of very white limestone soil, known as "albariza". Its uniqueness is due to the fact that this area was under the sea thousands of years ago.
All this together with a great team of master coopers, master blenders, oenologists and field team add to its 120 years of experience a unique know-how in the area.

Description of Lustau Amontillado Escuadrilla
Lustau Amontillado Escuadrilla is made from palomino aged in American oak barrels, using the solera and criaderas system, in Emilio Lustau's cellars. It was first aged for 4 years under the veil of flor and later 8 years in oxidative aging in the winery of the Empress Eugenia in Jerez de la Frontera. It is a classic Jerez amontillado: full-bodied, elegant and balanced. A wine that pays homage to the camaraderie and friendship of the Air Force squadron of which Emilio Lustau was a member.Ideal pairing
