Jacques Lassaigne Haut Revers du Chutat is the quiet white wine (not sparkling) under the name Coteaux Champenois produced by the winery, one of the best examples produced in Champagne within its category.
For many (including ourselves) the "Montrachet" of Champagne. A quiet wine made by Emmanuel Lassaigne in vintages when the acidity is not enough to produce his great sparkling wines. It is therefore located within what he himself calls his ephemeral cuvees.
Chardonnay 100% coming from chalk soils of a Lieux Dit planted in 1958 in the heart of Montgueux. Elaboration with minimum intervention, 2 years of wood aging.
Palette of citrus, apples in different seasons, white flower, powder and mineral notes on the nose. It is a wine of tremendous potential, fantastic with dishes with quality fish on the grill or even with toasted butter sauce, and of course with shellfish.
