Description of Domaine William Fevre CHABLIS
William Fèvre Chablis is a white wine on lees made by Domaine William Fèvre in the AOC Chablis appellation, with chardonnay, one of the star varieties of Burgundy (France).
Domaine William Fèvre is one of the most prestigious wineries in Chablis. Managed since 1998 by Didier Séguier, one of the most powerful winemakers in the production of white wines in Burgundy, it works 16 hectares Grands Crus to culminate in fresh and mineral wines of worldwide recognition.
William Fèvre Chablis comes from vineyards planted on Kimmeridgian soils. These are terroirs with millenary marine sediments that provide extraordinary finesse and minerality. Traditional agriculture is practiced with a detailed understanding of the terroir conditions.
Once the William Fèvre Chablis grapes are harvested, they undergo a short pneumatic pressing and a very light static settling. The must obtained ferments spontaneously with indigenous yeasts in small stainless steel tanks. The wine remains there with its lees for 8-10 months before bottling.
An appellation known especially for its freshness and minerality, William Fèvre Chablis is an exceptional Chablis from one of the best producers in the region.
