Pascal Doquet
Pascal Doquet, a unique vigneron in Champagne
This producer took over from his grandfather and then from his parents and is now a unique producer and a biodynamic reference in the Côte de Blancs.
When we talk about Pascal Doquet, we are talking about something different. This vigneron from Vertus works intensely to obtain champagnes of the highest quality in this Premier Cru of the Côte de Blancs where Chardonnay reigns supreme.
Tasting notes
Look
Lemon yellow with golden tones. Bubble very fine and uniform.
Smell
suggestive notes of yuzu and white flowers wilted, creamy notes of yeast and counterpoint to almost metallic feel reminiscent of wet stone.
Taste
The palate is crisp, while offering a gentle density surrounding the mouth. Final mineral and citrusy refreshing. Intense and subtle at the same time, great equilibiro for a champagne that despite its reservation seems very young.

Description of Champagne Pascal Doquet Arpege Premier Cru Blanc de Blancs
Pascal Doquet Arpege Premier Cru Blanc de Blancs is a 100% Chardonnay Champagne from Cote de Blancs, mainly from Vertus, with a blend of wines from different vintages. Pascal Doquet is a small independent producer who controls around 10ha of certified organic land, mainly in Cote de Blancs, where his vineyards in Vertus and Le Mesnil shine. Doquet is considered one of the purest and most brilliant winemakers within the somewhat more oxidative styles, focuses its work on preserving a magic Terroir, in the absence of systemic and seeking a management of the vineyard as well as the winery more respectful, both with the environment and with the wines themselves. Arpege 1er Cru Blanc de Blancs shows the paradoxical balance between mineral purity and result of the blend of reserve and wood-aged wines. Crunchy acidity, citrus confit, herbal tea, and that particular sensation of chardonnay that reminds us of yeast as many white wines from the Jura remind us. Wines of tremendous quality and price within what are considered Champagnes of connoisseur, very looked for in the circuit of small producer in Champagne. Try it with soft cheeses, white fish with intense sauces like a creamy mustard sauce, seafood or Asian fusion food.Ideal pairing
