Description of Champagne Jacques Lassaigne Extra Brut
This ephemeral Cuvée is a multivintagecon predominantly 2014 and 2012 and reserve wines from 2010 to 2013, made from grapes coming from different plots of Montgueux. The area is halfway between the Côte des Bar and the Côte de Sézanne next to the mythical city of Troyes. This cuvée is also at an optimal moment of consumption, disgorged in July 2019. Blanc de Blancs 100% Chardonnay that indicates the potential of the area.
Emmanuel Lassaigne continues his crusade to make Champagnes from organic vineyard management, low levels of sulphur addition, no filtration, and with indigenous yeasts. A unique terroir on a par with the great villages of the Cote des Blancs, it shows a precise nose of citrus and creamy notes with a crisp, mineral and refreshing mouthfeel. The texture as in all his wines is complex and the low pressure and well integrated bubbles make it a very versatile Champagne. Fantastic choice for a lunch starter, with shellfish, grilled oily fish or spicy Asian food. Its profile is able to cleanse and prepare the mouth for spicy, acidic and sharp dishes.
