What exactly is it?

Solera ageing is an ageing system for rum, brandy or even wine in the olden days

In this system, barrels are stacked on top of each other, to allow cascade racking.That is, the change of liquids from one barrel to another by gravity.

One of the characteristics of this system is that it limits the percentage of the contents of the barrels that are taken out to fill other barrels. It is never done all at once with the entire contents of the barrel.
