The grapes to elaborate this wine come from the first vineyards of Sauvignon Blanc that were planted in a wheel more than 30 years ago. This vineyard was certified as an ecological in 2018. The grapes are cultivated without employing pesticides, synthesis fungicides and herbicides. Its soil, formed by the characteristic platform of boulders, has outcrowded outcrops on the highest levels.

Making notes

The maceration at extremely low temperature to maintain varietal aromas. After fermentation, a constant work of lees is carried out, for 6 months, in order to obtain a structured and complex mouth.

Climatología

José Passionate Relative 2019 is the first vintage with the ecological certificate. The 2019 vintage is marked by a year of temperatures according to each season of the year in general terms and a scarcity of precipitation that has intensified as months passed (from January to September). The Vintage has been marked by the rainfall that has caused an intermittent vintage.
